How can I get the word out about a really good (or really bad) travel experience?

You can help increase transparency and accountability by rewarding responsible companies and reporting abuses. There are several organizations that invite first-hand accounts from travelers. These are just three examples of many:

Tourism concern (www.tourismconcern.org.uk) wants feedback about volunteer experiences, particularly about Gap Year project;
Born free (www.bornfree.org.uk), an animal rights group, runs a zoo watch campaign. Travelers are encouraged to submit details of any abusive conditions witnessed at zoos. the organization will do a follow-up;
Ethical Volunteering (http://www.ethicalvolunteering.org/) invites stories from volunteers who felt their projects were of doubtful value to host communities.
